Potato Sausage Skillet

Yield: 6 servings

Ingredients

check vegetable oil 3 tablespoons vegetable oil

1 pkg. (24oz.) frozen diced potatoes with onions and peppers

check dried oregano or basil leaves 1/2 teaspoon dried oregano or basil leaves

check pepper 1/2 teaspoon pepper

check broccoli flowerets 2 cups broccoli flowerets

check smoked sausage, cut into rings 1 lb. smoked sausage, cut into rings

check sharp cheddar cheese, shredded 4 ounces sharp cheddar cheese, shredded

Directions:

Heat oil in large skillet over medium high heat. Add potatoes, oregano and pepper. Cover and cook 8-10 minutes, stirring occasionally, until potatoes are light brown.

Stir in broccoli; add sausage. Cover and cook about 15 minutes or until sausage is hot. Top with cheese. Cover and heat until cheese is melted.
