Grilled Tomatoes With Pesto

Yield: 6 servings

Ingredients

Add medium firm tomatoes, cored and halved crosswise to shopping list 3 medium firm tomatoes, cored and halved crosswise

Add purchased pesto sauce to shopping list 1/4 cup purchased pesto sauce

Add onions, very thinly sliced to shopping list 6 onions, very thinly sliced

Add Monterey Jack cheese, shredded (about 2 oz.) to shopping list 1/2 cup Monterey Jack cheese, shredded (about 2 oz.)

Add smoked almonds, chopped to shopping list 1/3 cup smoked almonds, chopped

Add parsley, snipped to shopping list 2 tablespoons parsley, snipped

Directions:

Hollow out the top 1/4 inch of tomato halves with a spoon. Top each tomato half with 2 tablespoons pesto sauce and
an onion slice. Arrange tomatoes in 2 foil pie pans.

Place tomatoes in the center of the grill rack. Cover and grill for 8 to 10 minutes or until tomatoes are heated through.
