Black Bean and Hominy Salsa

Ingredients

Add black beans, cooked, rinsed and drained to shopping list 2 cups black beans, cooked, rinsed and drained

Add (15 oz.) golden hominy, rinsed and drained to shopping list 1 can (15 oz.) golden hominy, rinsed and drained

Add avocado, diced to shopping list 1 avocado, diced

Add yellow bell pepper, diced to shopping list 1 cup yellow bell pepper, diced

Add red onion, chopped to shopping list 1/2 cup red onion, chopped

Add fresh cilantro, chopped to shopping list 1/4 cup fresh cilantro, chopped

Add jalapeno, minced and seeded to shopping list 1 1/2 tablespoons jalapeno, minced and seeded

Add salsa, prepared (refrigerated-style) to shopping list 1/2 cup salsa, prepared (refrigerated-style)

Add salt and pepper to taste to shopping list salt and pepper to taste

Directions:

In a large bowl, combine black beans, golden hominy, avocado, yellow bell pepper, red onion, fresh cilantro and jalapeno. Add salsa; gently toss. Taste and add salt and pepper as needed.
