Prepare Rice-A-Roni mix as package directs, substituting 1 tablespoon oil for margarine. Cool 10 minutes.

In large bowl, combine prepared Rice-A-Roni, chicken, beans, corn, bell pepper and cilantro, if desired; set aside.

In small bowl, combine salsa, lime juice and remaining 2 tablespoons oil. Pour over rice mixture and toss. Cover; chill 4 hours or overnight. Stir before serving.
